1. Cut the fillets into strips and season with salt and pepper. Reserve.
2. In a bowl, mix half of the flour, corn starch, bicarbonate of soda and baking powder. Add water and vinegar and mix until creamy.
3. For breading, use the other half of the wheat flour. Dip the fillets first in the flour and then in the cream.
4. Fry in hot oil for 2 to 3 minutes or until they are brown.
5. Place the strips on top of a paper towel container for 2-3 minutes and you are ready to delight your family or guests!
